TULSA, Oklahoma - Sopa de Fideo (Mexican Noodle Soup)


2 cups Fire roasted tomatoes, pureed
1 med. Onion, chopped
1 teas. Garlic, minced
1 teas. Cumin powder
1 tabl. Chipotle paste
3 cups Chicken broth
2 tabl. Olive oil
8 oz. Spaghetti or Angel hair pasta, cooked and cut into 2” pieces
2 teas. Salt
2 tabl. Fresh cilantro, chopped
2 tabl. Chopped scallions
Lime wedges


Heat saucepan over medium-high heat. Add olive oil and onion & garlic. Cook for 2-3 minutes, stirring occasionally. Add tomatoes, chipotle paste & cumin and allow to come to a light simmer. Add cooked pasta and season with salt to taste. Ladle into soup bowl and garnish with chopped cilantro, scallions & lime wedges.
