TULSA, Oklahoma - Potatoes Au Gratin with Erin Barnhart of Panera Bread

Ingredients:

1, 16oz container Panera Baked Potato Soup

1, 24oz package frozen diced potatoes, thawed

1 cup whole milk

¾ cup parmesan cheese, shredded

1 tsp parsley, roughly chopped

Salt and pepper to taste

 

Directions:

Preheat oven to 400 degrees. Combine soup, potatoes, milk, and half of parmesan cheese in a large bowl. Season with salt and pepper and stir until mixed.

Pour into greased 8”x8” baking dish. Sprinkle remaining cheese over the top.

Cover with foil and bake for 30 minutes. Remove foil and bake an additional 5 to 10 minutes until potatoes are tender. Remove from oven and allow to sit for 5 to 10 minutes before serving. Sprinkle parsley over top.

 

Or try this:

Thaw potatoes overnight in the refrigerator. Alternatively, defrost in microwave. Place frozen potatoes in a single layer on a microwave-safe plate. Microwave on high in 30 second intervals until thawed.

You can also sometimes find refrigerated diced potatoes in the grocery store in the meat or diary department.
